Hi there and welcome to my blog. Today I am sharing a recipe that my mother in law shared with me a few years ago. After many years of trials to find the right red velvet cake mix that would not taste dry a friend shared this recipe with her and she’s been baking it for us ever since. Years. All family birthday cakes, first communion, confirmation, graduations and cupcakes for holidays like valentine’s day. It’s the best! Today I am sharing it with you.

Here is a video sharing how I baked the cakes, make the frosting, and also I give you a peak of what is inside my Wilton’s Cake Decorating Box.
THE CAKE –
- 1 box chocolate cake mix
- 1 c. sour cream
- ½ c. hot water
- ¼ c. oil
- 3 eggs, beaten
- 1½ oz. red food coloring (for red velvet cake)
- Mix the cake mix with sour cream and water.
- Add oil, beaten eggs and food coloring (for red velvet cake)
- Mix very well for 2 to 3 minutes with mixer.
- Pour into greased and floured 8 inch pans (for 3-layer) or 9 inch pans (for 2-layer)
- Bake for 350 degrees for 25 minutes.
- Cool on wire racks.
- Completely wrap cakes in parchment paper and place in ziplock bag or container where they will lay flat. Freeze a few days ahead of frosting.
- On the morning (or day before) remove cake from freezer and frost as normal with White Chocolate Frosting or other frosting of your choice. Store in refrigerator to promote freshness.
- Frost with White Chocolate Frosting or other frosting of your choice.

THE FROSTING –
- 1½ (8-ounce) packages cream cheese, softened (I used 2 whole pkgs. for the 3-layer cake)
- ½ cup butter, softened
- 2 (4-ounce) white chocolate baking bars (I used Ghirardelli) melted and cooled
- 1½ cups powdered sugar
- 2 teaspoons vanilla extract
- 2 teaspoons fresh lemon juice
- Beat cream cheese and butter at medium speed in electric mixer until fluffy
- Add cooled white chocolate, beating until blended
- Gradually ad powdered sugar, beating until smooth. (scrape down sides as needed)
- Add vanilla and lemon juice, beating until blended
- Cover and chill for 45 minutes or until spreading consistency
