Omg – this is the best pasta salad I have made in a long time.
In preparation for a family gathering this week-end I wanted something different than my usual go-to pasta salad. I searched best pasta salads and decided on this one from this website. I tweaked it a little for my taste so feel free to download or print the recipe below. 🙂

Best Pasta Salad

This pasta salad is delicious served at a family potluck, picnic in the park or just any night of the week.

Serves: 8-10
Ingredients
- 16 oz. of your favorite pasta, cooked as directed on package
- 1 bunch of cilantro, minced
- 2 Roma tomatoes, chopped
- 1 red onion, diced
- 1 cucumber diced
- 2 diced green onions
- ¼ c extra virgin olive oil
- ¼ balsamic vinegar
- 1 tsp. sugar
- *note the original recipe called for 1 c cashews but I omitted these and I only used about 6 stems of cilantro in my salad
Instructions
- Whisk to mix up well olive oil, balsamic vinegar and sugar in a small bowl - set aside
- Combine all ingredients together.
- Pour dressing over and mix well.
- Refrigerate until ready to serve.
- Stir before serving.
